Classic American Apple Pie With Homemade Crust

Important: Keep the butter and water very cold. Cold butter is one of the secrets to a flaky crust.

For the Apple Filling

  • 6–7 medium apples, about 2½–3 lb (1.1–1.4 kg)
  • ½ cup (100 g) granulated sugar
  • ¼ cup (50 g) packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter

For the Egg Wash

  • 1 large egg
  • 1 tablespoon milk or water
  • 1 tablespoon coarse sugar, optional

👩‍🍳 Step 1: Make the Homemade Pie Dough

1. Combine the dry ingredients

In a large bowl, whisk together:

  • Flour
  • Salt
  • Sugar

Mix well.

2. Add the cold butter

Add the cubes of cold butter.

Using a pastry cutter, two knives, or your fingertips, work the butter into the flour.

While the dough chills, prepare the filling.

1. Peel the apples

Peel all of the apples.

Remove the cores and seeds.

Cut them into slices about ¼ inch thick.

Try to keep the slices relatively similar in size so they cook evenly.

2. Choose the right apples

For the best flavor, use a combination of apples.

Good choices include:

  • Granny Smith — tart and firm
  • Honeycrisp — sweet and crisp

A combination of sweet + tart apples gives the pie much better flavor than using only one type.

Place the sliced apples into a large bowl.

Leave approximately 1 inch of dough hanging over the edge.

✨ Step 8: Seal and Crimp the Edges

Fold the excess dough underneath itself around the edge of the pie.

Press the edges together using your fingers.

For a traditional decorative edge, pinch the dough between your thumb and finger to create a scalloped pattern.

You can also press the edge with the tines of a fork.

Put the assembled pie in the refrigerator for 15–20 minutes.

This helps the butter firm up again and helps prevent the crust from losing its shape.

In a small bowl, whisk together:

  • 1 egg
  • 1 tablespoon milk or water

Brush the egg wash gently over the exposed crust.

Don’t put too much egg wash on it—you want a thin, even coating.

Preheat your oven to:

425°F (220°C)

Place the pie on a baking sheet. This is important because the filling can bubble over during baking.

First stage

Bake at 425°F (220°C) for 15 minutes.

Second stage

Reduce the temperature to:

375°F (190°C)

Continue baking for approximately 35–45 minutes.

The exact time depends on your apples, oven, and pie.


👀 How Do You Know It’s Done?

Look for three things:

1. Golden-brown crust

The crust should be deeply golden rather than pale.

2. Bubbling filling

The apple juices should be actively bubbling, particularly around the edges and through the vents.

3. Tender apples

Insert a thin knife through one of the vents.

The apples should feel tender but shouldn’t completely fall apart.

If the crust is becoming too dark before the apples are cooked, loosely cover the edges or top with aluminum foil.

This is one of the most important steps.

Don’t immediately cut into the pie.

Allow it to cool for at least 2–3 hours.

The filling is extremely hot when it comes out of the oven, and the juices need time to thicken.
