BBQ Chicken Skillet Loaded with Mushrooms

Ingredients
For the chicken
- 700 g (1½ lb) boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- 1 tablespoon olive oil
- 1 tablespoon butter
For the mushroom BBQ sauce
- 350 g (12 oz) fresh mushrooms, sliced
- 1 medium onion, thinly sliced
- 4 cloves garlic, finely minced
- ¾ cup (180 ml) BBQ sauce
- ¼ cup (60 ml) chicken broth or water
- 1 tablespoon Worcestershire sauce
- 1 tablespoon honey or brown sugar
- ½ teaspoon smoked paprika
- ½ teaspoon chili flakes, optional
- ½ teaspoon black pepper
- ½ teaspoon salt, or to taste
- 1 tablespoon butter
- 2 tablespoons chopped fresh parsley or coriander

How to prepare the chicken
Start by preparing the chicken. If using chicken breasts, slice any very thick breasts horizontally into thinner cutlets. This helps them cook evenly and prevents the outside from becoming dry before the center is cooked.
Pat the chicken dry with paper towels.
In a small bowl, combine the salt, black pepper, smoked paprika, garlic powder, onion powder, and oregano. Sprinkle the seasoning evenly over both sides of the chicken and gently press it into the meat.
Let the seasoned chicken sit for about 5–10 minutes while you prepare the vegetables.
Prepare the mushrooms
Wipe the mushrooms clean and slice them fairly thickly. Avoid cutting them too thin because they shrink considerably during cooking.
Slice the onion and mince the garlic.
Keep the mushrooms separate from the onion and garlic because they will be cooked in slightly different stages.
Sear the chicken
Place a large heavy skillet over medium-high heat.
Add the olive oil and butter.
When the butter begins to foam, carefully place the seasoned chicken into the skillet. Do not overcrowd the pan. If necessary, cook the chicken in two batches.
Cook the chicken for approximately 3–5 minutes on the first side, depending on thickness.
Turn it over and cook for another 3–5 minutes.
You are looking for a deep golden-brown exterior. The chicken does not necessarily need to be completely cooked through at this stage because it will finish cooking in the BBQ sauce.
Transfer the chicken to a plate and loosely cover it with foil.
Cook the mushrooms and onions
Reduce the heat to medium.
Add the sliced mushrooms to the same skillet. If the pan looks completely dry, add another teaspoon of olive oil.
Spread the mushrooms into an even layer and let them cook without stirring for about 2 minutes. This allows them to develop some browning.
Stir and continue cooking for another 3–4 minutes.
Add the sliced onion and cook for approximately 3 minutes, stirring occasionally, until the onion begins to soften.
Add the minced garlic and cook for 30–60 seconds.
Be careful not to burn the garlic.
Make the BBQ mushroom sauce
Add the following directly to the skillet:
- BBQ sauce
- Chicken broth
- Worcestershire sauce
- Honey or brown sugar
- Smoked paprika
- Chili flakes, if using
- Black pepper
Stir everything together, scraping the bottom of the skillet with a wooden spoon or spatula. Those browned pieces left behind from the chicken contain a lot of flavor.
Bring the sauce to a gentle simmer.
Cook for approximately 2–3 minutes, stirring occasionally.
The sauce should become glossy and slightly thicker.
Return the chicken to the skillet
Place the seared chicken back into the skillet, along with any juices that accumulated on the plate.
Spoon the mushroom BBQ sauce over the top of each piece.
Reduce the heat to low-medium, cover the skillet, and cook for approximately 5–8 minutes, depending on the thickness of the chicken.
Turn the chicken once halfway through cooking so it becomes thoroughly coated with the sauce.
The safest way to determine whether the chicken is done is with an instant-read thermometer: the thickest part should reach 165°F / 74°C.
Make it extra creamy and cheesy — optional
For a richer skillet, turn the heat to low once the chicken is cooked.
Sprinkle ½ cup shredded cheddar or mozzarella over the chicken and mushrooms.
Cover the skillet for 1–2 minutes, just until the cheese melts.
For an even creamier sauce, you can also stir 2–3 tablespoons of heavy cream into the BBQ sauce during the final few minutes of cooking.
Finish the dish
Turn off the heat.
Taste the sauce and adjust the seasoning if necessary.
If you like a sweeter BBQ flavor, add another teaspoon of honey.
For extra smoky flavor, add a small pinch of smoked paprika.
For heat, add more chili flakes or a little hot sauce.
Finish with chopped fresh parsley or coriander and sliced green onions.
A tiny squeeze of lemon juice can also help balance the sweetness of the BBQ sauce.

Tips for the best result

Don’t drown the mushrooms immediately. Letting them brown before adding the sauce gives them a deeper, meatier flavor.
Use a good BBQ sauce. Since BBQ sauce is the main flavor of the dish, choose one you genuinely enjoy. A smoky, slightly sweet sauce works especially well.
Don’t overcook chicken breasts. They can become dry quickly. Thinner pieces are easier to cook evenly.
Chicken thighs are excellent here. They are more forgiving and stay juicy even if cooked a little longer.
Adjust the sweetness. Some BBQ sauces are already very sweet, so you may not need the honey or brown sugar at all.
Make extra sauce. If serving with rice or mashed potatoes, an extra ¼ cup of BBQ sauce and a splash of broth makes the skillet particularly delicious.
Storage and reheating
Allow leftovers to cool and refrigerate them in an airtight container for up to 3–4 days.
To reheat, place the chicken and mushrooms in a skillet over low-medium heat. Add 1–2 tablespoons of water or chicken broth, cover, and heat gently until hot throughout.
You can also microwave individual portions, but cover them loosely and heat in short intervals to prevent the chicken from drying out.
